Methods
Data on salt content was collected from chemical analyses done by the Dutch Food Safety Authority sampled from several major supermarkets, including private and national supermarket brands, as well as chemical analytical data on bread from the Dutch Bakery Association. Additional new data came from food label information found in the Food Label Database.
Products were categorized into eight food groups and 27 categories, for which mean and standard deviation of salt content (mg/100g of product) were calculated and compared between 2011 and 2016.
